One of the great things about Fall is getting up on a Saturday or Sunday and making breakfast. None of that quick on the go stuff… but sleeping in a little and then perhaps rolling out of bed and making pancakes.
So you go into the cabinet to grab the box and realize to your horror that you don’t have any pancake mix left. Now what?
Well, you would be surprised at how easy it is to make pancakes from scratch!
I however love crepes! What is great about crepes is that you can roll them up and fill them with fun things.

1 cup all-purpose flour
1 teaspoon white sugar
1/4 teaspoon salt

3 eggs
2 cups milk
2 tablespoons butter, melted

What is great is that the ingredients are mostly items you probably have lying around!
I’m one of those that likes to alter recipes to make them easier. It called for you to sift the dry ingredients, but we skipped that. You are also supposed to beat the milk and eggs with a mixer and then add the melted butter.
Since Ava wanted to make the crepes, I was just letting her have fun with it and they still tasted great! We added a little more sugar and some cinnamon as well.
We sprayed the pan and let it heat up before making our first crepe.
Yum!!
I like to just eat them plain, but Ava has fun with cool whip and usually strawberries. Today, we were out though so she went with cool whip and sliced banana!
Then she rolls it up and enjoys!

1/2 teaspoon baking soda

2 tablespoons vegetable oil

Sometimes I add some vanilla extract, cinnamon and extra sugar to make them a little sweeter….
Making breakfast with the kids is really fun and a special memory. Plus we just toast the extra pancakes during the week for breakfast before school.
