A good friend of mine happens to be a cookbook author… Since I am hosting Thanksgiving this year, I have been on the hunt for some recipes and ideas on things to make and serve!
So, I thought I would reach out to him and ask him for some of his famous recipes to share with anyone else that may need a few new ideas this year! He also answers the question of what to do with that leftover turkey? Of course there is always sandwiches, but what about some nice soup to warm you up on a chilly Fall day?
Frankie Imbergamo, a cookbook author whose “gravy and meatballs” recipe won a national contest and was featured on chef Emeril Lagasse’s TV show!
Frankie’s Italian Stuffing
1 + 1/2 Cups of cooked white rice
1 stick of butter
1/2 lb. Muenster cheese
1/2 lb. Ham
1 Cup grated Romano cheese
1 Tbsp. parsley
1/4 tsp. ground black pepper
6 eggs
Mix all ingredients. Let cool and then stuff turkey. Enjoy!
Don’t want to stuff the bird? Just throw all of the ingredients in a casserole dish, cover it with foil, and bake for one hour at 350 degrees.

Frankies stuffed peppers
10 bell peppers
1+1/2 cups of Plain Bread crumbs
1 cup of grated romano cheese
1 and half tablespoons fresh parsley chopped
2 cloves garlic-chopped
half cup of olive oil
half teaspoon black pepper and salt.
Mix all ingredients together.
cut peppers about quarter of inch on the tops.
rinse out peppers–removing the seeds.
stuff peppers with mixture and place
in a greased lasagna pan with olive oil.
sprinkle peppers with romano cheese
cover with foil–bake at 350 degrees for 45 minutes
and then remove foil and bake for 15 minutes more.
Frankie’s tip: a nice bottle of Merlot goes well with these peppers!!

Frankie’s Italian Anise Cookies
Wet Ingredients
6 eggs
2 sticks of butter (melted and cooled)
3/4 teaspoon anise oil
Dry Ingredients
1 cup sugar
1 tablespoon baking powder
4 cups of flour (sifted)
Frosting
Confectioners sugar
Milk
Sprinkles
1/4 teaspoon anise oil
Preheat oven to 350 degrees. Mix together dry ingredients and combine with wet ingredients. Form mixture into small balls and place on cookie sheet. Bake for about 12-14 minutes. Let cool completely before adding frosting.
Turkey Soup
Frankie recommends saving the turkey legs for a nice turkey soup.
Fill up a large pan of water three quarters full. Add one onion, carrots, one whole package of celery, salt, pepper and one 6oz. can of tomato sauce. Cook for two hours and strain at the end.
When the soup is almost done cooking boil some tubatini pasta, elbows, or small shells. Combine the cooked pasta and the soup. Serve immediately and sprinkle with Romano cheese. Enjoy with nice crusty Italian or French bread and a glass of merlot. Deliciozo!
